Our cacao is certified organic and comes from Camino Verde in Ecuador — a fermentary outside Guayaquil that buys freshly harvested beans from more than a hundred farms and ferments them centrally, by inoculation, in stacked bags. Vicente Norero runs several differently-inoculated fermentations of the same beans at once and sells them as distinct lots. His cacao has twice been selected among the Cocoa of Excellence Best 50.

Camino Verde

The craft is the fermentation.

Most cacao is judged by where it grew. Camino Verde is judged by what happens in the days after harvest — the window in which almost everything people recognise as chocolate is actually made.

The operation began as an estate at Balao, on the coast of Guayas province. Since 2016 it has worked as a centralised fermentary in Durán, buying fresh unfermented beans from over a hundred farms across Ecuador, and working with grower groups in Esmeraldas and Los Ríos to improve processing and secure better prices at the farm gate.

Fermentation is done by inoculation, in stacked bags in a humidity-controlled room, rather than in the usual wooden boxes. Several differently-inoculated fermentations of the same beans run at the same time and are kept and sold as separate lots — a working method closer to a laboratory than a warehouse.

Selected among the Cocoa of Excellence Best 50 in 2013 and again in 2015, with genetics declared as Nacional × Trinitario.
